I started the Flour Nut because of a passion for a healthy lifestyle and the desire to
share with everyone the healthy alternatives available to them.
In March of 2007 I was diagnosed with a gluten intolerance/grain allergy and Candida, along with stomach ulcers, leaky
gut, fibromyalgia and a host of other problems. I had searched for years…trying to find someone to help me figure out
why I felt so sick all the time. Although I thought I lead a healthy vegetarian lifestyle, I did not feel or look well.
I was referred to a Holistic Health Practitioner – someone who claimed that food could either prove to be the road to
a healthy lifestyle, or the root of all evil! She said that she would be able to help me figure out exactly what foods
my body needed and what foods were causing me to feel so awful. I thought to myself…what have I got to lose! I have
been on countless diets; seen several specialists and nothing had worked so far…I am going to give this a shot.
Boy was I amazed when she told me that I had all the health conditions listed above and that they were caused by the
foods that I was eating…namely gluten, sugars & soy. I decided that I was going to follow this “diet” she was suggesting
to a T and see where it got me…the only place to go from where I was at, was up!
To my amazement over the next few months I felt a marked improvement in my health. I was not feeling nauseous or
bloated every time I would eat, I was not getting the sinus headaches that I suffered with almost daily, I had more
energy, I was not so irritable…and I lost 20 lbs!! I felt great!
Just a few of the many things my Holistic Health Practitioner suggested I include in my diet were almonds
(in the whole form, or used as a wheat flour alternative) and coconut (either as an oil or as an additional flour
alternative). Almonds are not only a great source of protein, but are also very good for your heart. They have a
good amount of vitamin E in them which is a great natural antioxidant, and best of all for me….the almond flour makes
a great alternative flour for baking! Coconut is very low in carbohydrates and high in fiber, helping your body to
rid itself of toxins. For some people when they go on a gluten free diet they miss the everyday foods they are used
to eating, such as cookies, muffins, breads, cakes, brownies etc. Well I can tell you that I am
certainly not missing out! The almond and coconut flours make a very moist dessert or breakfast treat…one that
will fill you up & leave you satisfied and feeling great!
I am happy to say that my son and my husband have joined me on the gluten and refined sugar free diet, and we
are all feeling great without the regret of eating foods that make us feel lousy!
My goal in creating The Flour Nut is to be able to provide as many people as possible with healthy alternatives
such as almond and coconut flours and many others in the near future…I will always do my best to use the freshest,
healthiest, locally grown ingredients available, many times getting them direct from the grower…doing so at a
fair price to all.
